The large size of this cookie sheet lets you bake more in less time, which is great if you're baking dozens of cookies for a party, holiday celebration, or after-school snack. With this efficiency also comes quality: once available only to commercial kitchens, the sheet is made of professional-weight aluminized steel, so it won't buckle under intense heat and will consistently provide fast and even heat distribution. No need to turn the sheet midway through baking. Bakers unaccustomed to heavy-gauge aluminized steel should pay close attention at first since foods bake (and burn) more quickly. The pan will gradually darken with use, which will speed up baking time and require slightly lower oven temperatures.

The traditional uncoated surface of this sheet makes it extra rugged and a great conductor of heat, but this does mean butter, oil, or parchment paper should be used to prevent sticking. Greasing or lining the pan also simplifies cleanup since the pan can go from oven to dishwasher with no scrubbing in between. --Emily Wolf

I do a lot of baking and must say these sheets are wonderful. They are light and easy to handle. They also cool off quickly. I would highly recommend these for any baker.

Just received 4 of these sheets as replacements for ECKO because I no longer use non stick products. First thing I noticed is that the edges are really sharp! Why would anyone make cookie sheets with sharp edges? Next I tried to take off the 8x10 Chicago Metallic LLC sticker and the adhesive used to secure the paper is so aggressive that I could not get the clumps of adhesive off the pan. All 4 of them were like this. Again, who would do this and most importantly - is this a food grade adhesive? I decided to soak the sheets in hot soapy water over night to remove the adhesive. This worked for 3 of the 4 sheets, but all 4 sheets rusted! To get the rust off I had to use Brillo which of course scratched the junky sheets. I found Chicago Metallic LLC on the web via Focus Products Group LLC and contacted them about the problems. Once I submitted my complaint on their form I got a return message saying the email address was not valid. Total garbage. I'll use them this Christmas and then dump them since I don't have the time to order good ones.

WOW, this pan lived up to its billing, plus, and continues to do so. It makes me look like I am professionl ! great results, eve browning, every time. Highly reccomend you give it a try if you are 'on the fence' about this pan.

Summary:Large Baking Surface Yet Fits In Small Apt Oven

I bought a couple of these cookie sheets a few years back. They are so well made. I appreciate the design as I can put a lot of cookies on it or a braided bread, pizza, etc. I have used these over & over and they have been through a lot of 'torture' without showing it! I have sprayed cold water on a hot cookie sheet and no problem. They have been accidentally dropped several times and no problem. They will last at least 25 years.

Summary:Pans warp in 350 F oven

I purchased two of these pans and both of them they started to warp within 5 minutes of being placed in a 350 F oven. The two opposite corners would warp up several inches causing an uneven baking surface. Once I take the pans out of the oven, the pans relax and are flat again.

Terrible product as it is difficult to evenly cook anything when the pans fold so badly. I returned them to Amazon.
