This 12-inch everyday pan has a domed, glass lid so cooking can be monitored without releasing heat. The lid is oven-safe to 450 degrees F, ensuring the pan not only can be used atop the stove for sautÉing, stir-frying, and preparing one-dish meals but can go into the oven for braising and even baking. Handles stay cool on the stovetop. The pan's rim is flared to facilitate dripless pouring. | Comment: | I recently moved into a new rental with a glass top electric stove. Unfortunately my cheap old stainless pots and pans, which have served me well, are slightly warped these days. It's enough that the pans don't heat evenly on the flat glass top. So, I thought it was time to buy some real cookware. |

| Comment: | Since buying this pan about a month ago, I think I've put it in the cabinet exactly once. It's either on the stove or in the sink getting cleaned for the next time. Although I have a large collection of non-stick pans, I'm always finding myself looking for something new to cook in this one. Non-stick pans simply can't compare, especially when it comes to searing meats (mmm steak) and creating sauces and gravies from the great stuff that sticks to the bottom of it. If you're having to clean that stuff up afterwards then you're missing the best part of using this pan! |

| Comment: | I just love this pan. I am just starting to collect the Calphalon Triply set, and did so after a lot of research. I am trying to get away from the teflon pans because of the health hazard, and started looking into stainless even though I was afraid that food sticking would be a problem. I decided to try the stainless because I have a good set of stainless stock pots that I have been very happy with. I decided on the Triply because of so many good reviews, the good weight, and the fact that the aluminum and stainless layering was on the sides as well as the bottom. I also like the glass top to view contents. When I got this pan, I also saw that there is a seal on the cover to hold in moisture. I followed the instructions to wash in hot soapy water before used, and also to coat the inside with oil just before use and before heating. Then I preheated the pan on a medium heat before putting the food in. The first dish included a number of ingredients (onions, meat, peppers, mushrooms) and then a sauce. Everything cooked wonderfully with no sticking. Cleanup needed only soap, water, and a dish cloth, and the pan looked like new. I have ordered a few more for this set and will review them as I use them. I expect that this will be the last set I ever have to buy. |
